Chipotle Mexican Grill for Dinner

Oh yummy, I have been dying to try the Chipotle Mexican Grill restaurant ever since I saw them on the Food Inc DVD. Fresh, delicious “food with integrity” – it all sounded very exciting.

DH went to a Chipotle for lunch with his boss, and brought home a menu. He raved about the food, and he isn’t even a big Mexican fan. So tonight, we decided we were in the area, so we visited the Chipotle in Nashua, NH

It was very fast, fresh, and delicious. It’s a great feeling to know you are eating a healthy dinner. I ordered the Burrito in a Bowl, with chicken, black beans, lime rice, loaded it with tomato salsa, corn salsa (spicy yum), and romaine lettuce.

I also ordered a side order of guacamole. I have never had guacamole before, and have been dying to try it. Well, actually, I think I had it years ago at Chili’s and didn’t like it. I also tried a tiny little bit at Whole Foods yesterday. It was out as a sample with some chips, but I couldn’t get a good taste of it. Anyway, I figured this would be a great opportunity to try it, since it seemed like it was fresh and well made. So, I ate my first real portion of guacamole, and I LOVED IT! oh it was so tasty! I am definitely going to make some of this myself for sure!

Oh and I still have a good portion of my dinner leftover for lunch tomorrow! Yum!

Overall, thumbs up for Chipotle Mexican Grill, except that the tables were dirty. I don’t think anyone was cleaning them. But despite that, we will definitely return, but not sure we’ll visit to the Nashua NH location.

One last pet peeve is that their mobile web site is pretty skimpy, compared to their fancy smancy Flash-based web site that cannot be accessed with an iPhone. I would like to have access to the Nutritional Data pdf, so I can see my calorie intake before I order.

Baked Chicken With Shallots Recipe

Made some wonderfully simple baked chicken with shallots tonight. Very easy and simple.

Serves 2
Ingredients:

Two (halved) chicken breasts (approx 4 – 6 oz each)
1 Tbsp Olive Oil
Chopped/Diced Shallots (one or two bulbs) – if you don’t have shallots, onions will do
Misc Herbs and/or spices, salt and pepper

Place chopped shallots in 8 inch square baking pan
Drizzle 1 Tbsp Olive Oil over the shallots
Mix oil and shallots together
Add Chicken pieces, flip to coat both sides of chicken with oil and shallots. Spoon shallot mixture over chicken.
Season with spices, salt & pepper.

Turkey Meatloaf

I was planning on making pasta with turkey tomato sauce, but figured I might make a meatloaf instead. That way I could take the leftovers and easily make the pasta tomato sauce tomorrow night.

I searched on the Epicurious iPhone app for ground turkey recipes, and found what looked like a good one.

I had to edit the ingredients, and “make it my own” as usual. (Note: I am not a good recipe follower, I rarely ever make a dish to recipe specifications)

I had one pound of ground white turkey (Natural from Plainville Farms) so I figured I better cut the recipe ingredients in half.

I didn’t have any bread, so I used 1 cup of Kikkoman Panko Bread Crumbs (only 220 calories for the full cup)
1/2 Cup of Swanson Low Sodium chicken broth (they have organic low sodium now! Yay)
Some diced onion
1 tbsp Olive Oil (yum)
1 egg (Pete & Gerry’s – Organic Eggs)
Basil, onion powder, garlic powder, a little dash of cumin, salt & pepper

Mixed that up, (smelled really good) then I donned a plastic food glove and mixed in the pound of ground turkey (not my favorite part! yuck)

Bake in pre-heated oven at 375 degrees.

The reviews were excellent, but since I messed with the ingredients, and only used ground white turkey, I hope it’s not too dry.
We’ll see how it comes out.

ETA: The meatloaf came out okay. I think I definitely overcooked it. Next time, I will watch it better. The taste reminded me of Thanksgiving turkey and stuffing. It was good. I think I might use less breading next time so it won’t be so “stuffing-like” and also might add thyme, as in the original recipe.

But all in all, it was a good start to a good turkey loaf.

Photos below are not that appealing, and yes, I know my dish is very carb heavy! I didn’t feel like green beans and was too lazy to make a salad, so I microwaved frozen peas. I also added four Poppys potato and cheddar Pierogies with a dollop of fat-free plain yogurt. Yeah, way too carb heavy, but I am usually under on my carbs, so it’s okay.

Bell & Evans breaded chicken

Yum, picked up a package of Bell & Evans frozen breaded chicken, and I baked one piece for dinner tonight (Mike went to the ball game). Oh it was just yummy, not at all like other typical frozen breaded chicken burgers!

Bell & Evans patties are made with natural chicken, raised without antibiotics. The patties are not breaded too much, and they are easy to bake!
