My First Homemade Avocado Guacamole!

So, I finally got around to using one of the avocados I bought from Whole Foods last week. They were definitely ripe, so I put them all in the fridge for safe keeping.

This morning I decided it was time to use one for lunch.

Used a spoon to scoop out avocado fruit into a glass bowl. Discarded the seed, even though I had read that it was helpful for oxidation prevention.

I mashed with a fork, then added:

  1. zest from lime and 1/4 lime juice – it was about 1 tbsp. I microwaved the lime for a couple of seconds first.
  2. 2 chopped garlic cloves
  3. 1/4 About a Tbsp of chopped red onion
  4. 2 oz of turkey breast (leftover from dinner) – cooked shrimp is a lovely alternative
  5. 3 small whole tomatoes chopped – including seeds
  6. Didn’t add any seasoning or spices/herbs this time around Add salt, pepper, cilantro

Tasted a bite and it was delicious. I can’t wait for lunch! I closely covered the bowl with plastic wrap, and then put on the plastic lid for storage for my lunch.

Approximately 325 calories, and tons of fiber and MUFAs (mono-unsaturated fats)

ETA: Well, I was so excited for lunch, but a little disappointed when I started eating. The red onions were so overpowering, they were very strong. I will use much less next time, or possibly use Vidalia or sweet onions instead. I also will add some salt, pepper, and maybe some fresh cilantro.
