I received some lovely zucchini in this week’s CSA share, and I wanted to make some more of the yummy zucchini onion pancakes, but didn’t have the time to sit and cook pancakes tonight. I needed something that could be thrown into the oven and easily baked with virtually no assistance.

So, hmm, I thought, how about a baked gratin? yum.

100% Whole Wheat Zucchini Bread (with Dark Chocolate, Nuts & Sunflower Seeds)

I got two larger zucchini squash this week in my CSA share and I decided to try baking a zucchini bread. To add a little extra flavor & nutrition, I tossed in wheat germ, dark chocolate, walnuts and sunflower seeds too. Yum! DH is not a fan of zucchini, and he even thought it tasted good.

I found inspiration from the Zucchini Bread recipe on All Recipes, but similar to my banana bread, I wanted to reduce the sugar. I think I’ve done that for this particular recipe.

Zucchini Onion Pancakes Recipe

For the Summer Lovin week over at I Heart Cooking Clubs – Cooking through Mark Bittman recipes!

The cookbook “How to Cook Everything” authored by Mark Bittman is available in a handy, easy to use, full featured iPhone app. I have been browsing the recipes, getting to know the app and I am totally thrilled with it! Highly recommended if you have an iPhone. I would love to see more cookbooks available like this!

Anyway, I saw the recipe for zucchini pancakes, and knew I had to try them. We received a medium sized zucchini in our vegetable CSA share last week, so it was the perfect time to try it.
