Garden Strawberries 

Unfortunately I’m not growing a veggie garden this summer, but I do have some wonderful strawberries from last season’s plantings (from Farmer Dave). 

What a difference compared to my older strawberry plants. The worms still attack the leaves, but the plants are strong enough to fight them to still be healthy. 

In just two days, I’ve netted almost 1/2 pound of strawberries.

Homemade Blueberry Jam (Lower Sugar)

Okay someone please tell me why I feel the need to make my own jams and jellies when there are perfectly good store bought products available?

Tell me that it’s totally worth it because I’m controlling the ingredients and sugar content. And it doesn’t matter that I’m melting over a hot stovetop on a 90° day!

Okay enough self-pity.

Late last summer, I decided that I was going to try to create enough canned jams and jellies so there wouldn’t be a need for commercial product.

Since I started so late in the season, all the cool fruits were out of season (like strawberries, blueberries, and stone fruit), so I started with an easy apple cider jelly, then onto batches of Concord grape jams & jellies.

I’m so proud that I made enough to last us through winter! But spring couldn’t come quick enough as I was down to one last jar of sad apple cider jelly, along with a few emergency jars of Concord grape “syrup” that didn’t quite work itself into jam.

So when Whole Foods Market announced that they were offering organic blueberries for $1.99/pint I knew it was time to start making more jam!

I had borrowed “Put ’em up” from the library and I found a “quick blueberry jam” recipe that utilized Pomona’s Pectin without the need for massive amounts of sugar, so along with 4 pints if blueberries, I also purchased a box of Pomona’s.

I used Pomona’s a couple of times last year. I like that I can use a smaller amount if sugar and didn’t have to worry about making the jam thicken on its own.

So this morning, despite the 90° heat wave, I got my ingredients ready and proceeded to make a batch of blueberry jam while a big pot of water and jelly jars came up to boil next to it.

I was doing really well, following the directions, allowing the jam to come to a boil slowly. I then added the lemon juice, calcium water, and sugar pectin mix and stirred stirred stirred waiting for the second boil.

I kept peeking, and it wasn’t quite there yet, until I turned away for a little too long and splurshhhh, blueberry jam erupted all over my gas stove!

Then it was time to remove from heat and allow to sit for 5 minutes before ladling into jars for the hot water bath. When I was finished, I had 4 (eight oz) canned jars and 2 for the fridge.

The other good news was the sticky blueberry mess on my stove was thankfully easy to clean!

Here’s the recipe:

Quick blueberry jam

Based on recipe from “Put em up” cookbook by Sherri Brooks Vinton

Makes about 6 cups (original recipe stated 4 cups, I used 4 US dry pints of blueberries. 1 US dry pint = about 2.3 cups, even after losing some to boil-over on the stove)

This jam is full of fresh blueberry flavor. Because these berries are easy to stem and have no hulls or noticeable pips, it’s a quick project too.

Ingredients

1 cup white sugar
2 teaspoons Pomona’s universal pectin
4 US/dry pints blueberries, stemmed (about 9-10 cups, original recipe stated 8 cups)
1/4 cup bottled lemon juice
2 teaspoons calcium water (mix included in the Pomona’s box- I still had a batch in the fridge from last year)

Directions

  1. Whisk the sugar and pectin together in a bowl and set aside.
  2. Rinse blueberries and add them into a (nonreactive) sauce pan (I used my 4qt stainless pot) and slowly bring to a boil over low heat.
  3. Continually stir and crush blueberries with potato masher and/or immersion blender (I used both)
  4. Add the lemon juice and calcium water.
  5. Slowly pour in the sugar pectin mixture and keep stirring to make sure it all dissolves.
  6. Return jam to a boil, and then immediately remove from heat to let the jam rest for 5 minutes, stirring occasionally to release air bubbles. Skim off any foam.
  7. Carefully ladle jam into small jelly jars and either store in fridge for 3 weeks or process for 10 minutes using hot water bath method.

Using only 1 cup of sugar, it’s approximately 17 calories and 4g sugar per Tbsp!!!

I Gave In – Strawberries That Aren’t Local

I usually don’t purchase strawberries unless they are local or CA organic. Today, I caved. Hannaford was having a 2/3.00 sale so I bought one pack. It’s been slim pickin’s around here with apples and oranges going out of season, and I desperately needed fruit.

So tonight we’ll feast on long-traveled, pesticide-sprayed California strawberries. I’m sure they will be delicious, despite my horrible assessment of them! ha!

UPDATE: The strawberries were good. I sliced them and mixed them with fresh-cut pineapple. There was enough for us to have a bowl for lunch today too!

The Navels are Here! The Navels are Here!

I stopped at the grocery to get a couple random items, and I was so excited to see bags of California navel oranges!

Of course I grabbed a bag.

I adore CA Navels, I think they are my favorite fruit! I miss eating oranges in the summer, by November/December, I’m struggling through “citrus withdrawals” – I count the days until they are in season again!

Whoo hoooooo! I think they seem early this year, but I won’t complain!

Watermelon – Too Early

Well, I thought the “signs” were all there to harvest our first watermelon.

It sounded hollow when thumped, the bottom was bright yellow, the “vine/tendril” looked like it was drying.

So we harvested Tuesday, and sliced it in half on Wednesday night. OOps, it was still pretty white inside, but surprisingly it was still fairly tasty; I ate it for my TV snack. LOL

Lesson learned, we’ll wait until the end of the month before harvesting any more watermelons!

Gardening Diary: Male & Female Watermelon Blossoms

I am fascinated by the phenomenon of “male” and “female” flowers in my garden. First it was the cucumbers. I was excited to find both male and female blossoms and was thrilled to be able to see the difference between the two.

I finally started seeing blossoms on one of the Sugar Baby watermelon plants the other day, and I’m happy to report we have a good mix of both male and female! hehee. I know, it’s a sick obsession I have!

And the close-close-close up; isn’t it so cool you can actually see the watermelon stripes already? It’s a tiny little thing, about the size of a pea! :)

Bob’s Red Mill Cereal Muffins with Peaches, Strawberries, & Raisins

I love making muffins using Bob’s Red Mill 7 Grain (or 10 grain) hot cereal. They’re similar to oat bran muffins, but so much better!

My husband enjoys eating muffins for an easy breakfast-on-the-go, and I always keep a batch in zip bags in the freezer for him. These muffins are especially great for those (like my DH) that do not like hot cereal! They make a great mid day snack too!

Here’s my recipe for muffins with peaches, strawberries and raisins:

Bob’s Red Mill 7 Grain Cereal Muffins with Peaches, Strawberries, & Raisins

Makes 18 muffins

Ingredients

  • 3 cups dry Bob’s Red Mill – 7 or 10 Grain Hot Cereal, or regular oat bran hot cereal
  • 1 tsp Kosher Salt
  • 3 tsp Baking Powder
  • 1/4 cup sugar or sucanat
  • 2 cups unsweetened Almond Milk (or any liquid equalling 2 cups: plain yogurt with water, regular milk, coconut milk, etc)
  • 1 large egg (or extra-large, jumbo, whatever you have on hand, muffins are so forgiving!)
  • 1/2 cup honey, preferably raw
  • 1/2 cup unsweetened applesauce, preferably organic
  • 1 tsp vanilla extract
  • 1 tsp almond extract (optional)
  • 1 cup (not packed) raisins, preferably organic
  • fresh fruit: handful of strawberries, 2-3 peaches or nectarines, 3-4 plums, a cup of blueberries, etc.
  • Other optional ingredients like chopped nuts, seeds, etc.

Note: These muffins were sweet, so you can reduce the honey to 1/4 cup, which is what I will probably do next time I bake them.

Instructions

  1. Preheat oven to 350°
  2. In very large mixing bowl, whisk all the dry ingredients: cereal, salt, baking powder, sugar
  3. In large glass measuring cup, combine milk/water, eggs, honey, applesauce, and extracts
  4. Pour wet ingredients into dry, mix carefully, try not to overmix.
  5. Stir in fresh fruit
  6. Spoon into muffin tins lined with paper – I use my Good Grips Medium Cookie Scoop that I picked up from Amazon last year. It isn’t overly large, so I need to usually scoop twice, but it works really well without too much mess.
  7. Bake for about 15-20 minutes, or until tops are no longer soft and mushy to touch.

Mind you, I am NOT a baker, but I do like making muffins because they are so forgiving. I don’t have to measure quite as precise as other baked goods, like cakes and pies. I can throw a bunch of dry and wet ingredients together, and if the consistency is too dry, I add a touch more liquid.

As I said, the sugars are on the high side. Reducing the honey to 1/4 cup, lowers the sugar to 14g. If you also reduce the raisins to 1/2 cup, the sugar is lowered to 12g. Start off reducing the sweeteners slowly, and your taste buds will get used to it.

Satsuma Mandarins One Day Sale at Whole Foods

Friday, December 2, Whole Foods Grocery is having a one day sale for 5 lbs Satsuma Mandarin @ $4.99 – that’s $1 per pound.

I’ve never heard of Satsuma, but I really love citrus and oranges in particular. I’m thrilled that the California citrus season is finally upon us!

According to Whole Foods:

Satsumas’ annual harvest begins in November and lasts just 6 to 8 weeks. They are easy-to-peel and great for snacking on the go, or as a substitute for tomatoes in winter salads. The sweetness of Satsuma’s pair nicely with nutty greens like arugula or peppery greens like watercress.

Produce Oasis states that because of the fruit’s high sugar content, they make great choices for preserves. I’ve recently borrowed a bunch of canning/preservation books from the library, and this could be a great time to try making some orange jam! Or hmm, maybe some salted preserved mandarins!

Farmer Dave’s CSA 2011 Review – Season 2

Last year, I wrote a detailed review of my first CSA season with Farmer Dave’s in Dracut MA. We just finished this season’s CSA and the veggies were just as plentiful and delicious!

If you are new to CSA’s, please read last season’s review as it includes a lot more detail about CSA’s and their benefits. There is also information on the Farmer Dave web site.

I won’t repeat too much information here, but to summarize, Farmer Dave offers small & regular sized vegetable CSA shares with pick-ups in Beverly, Burlington, Lanesville, Dracut, Lawrence, Tewksbury, Somerville, Putnam Investments (for Putnam employees only), Downtown Gloucester, Boston Medical Center, Jamaica Plain, and newly added Reading.

They also offer summer fruit shares, as well as late fall and early spring shares.

Here are the details for the 2011 weekly “small” vegetable share pickup:

Next Season?

Unfortunately, I do not plan on joining the CSA for 2012, and it has nothing to do with Farmer Dave’s, or the quality and price of the CSA.

I simply decided that it was just too much pressure, especially in the summer months. It was just too overwhelming to process, cook and eat all the vegetables we were receiving. I just couldn’t keep up with cooking ideas, and I felt like I was missing out on other vegetables that I was craving (like broccoli) but couldn’t buy because we already had so much food from the CSA.

So next season, I’ll continue to support and shop at Farmer Dave’s farm stand but also venture out to other farms and farmer’s markets. I’m excited that I’ll be able to choose exactly the vegetables I want, and it’ll be easier to plan my menus, especially when we’re on vacation.

It will be so helpful to shop earlier in the day if needed, which will give me more time to organize and process my produce before I needed to start dinner. I also hope this will help with maintaining a grocery budget and meal plans, since I can purchase exactly what I need in smaller or larger quantities.

I’ll play it by ear, and see how it goes, who knows I might miss it so much, I’ll go back the following season, or I might decide to sign up for their late fall CSA share. We’ll see.

I want to make it clear that I do not regret participating in the past two CSA seasons; I learned about many amazing new foods, and learned how to prepare them. For this reason and many others, I do not want to dissuade anyone from joining a CSA.

To those that want to try a CSA in the Eastern Massachusetts area, I highly recommend Farmer Dave’s! They have many pick-up locations and it’s a great bargain for all the food you receive. PLUS, you are supporting a local farm!

Sage Spoonfuls By Liza Huber – Book Review

I became interested in the book, Sage Spoonfuls – Simple Recipes, Healthy Meals, Happy Babies when I saw the author, Liza Huber, and her mother Susan Lucci (All My Children’s Erica Kane) on a morning talk show. Liza was promoting her book, and she spoke about how important she thought it was to make your own homemade baby food.

I am not sure why I gravitated to her and this subject matter, seeing that I do not have any any children, nor will I in the future, but I am passionate about healthy food, and I agree that good nutrition has to start as early as possible, especially when we are seeing soaring rates of obesity and Type 2 diabetes in young children. Maybe the subject struck me because my niece recently had a little baby girl, and I am hopeful that maybe she could be raised with wholesome healthy homemade food.

So, long story short, I was fortunate to receive a review copy of Liza’s book, and I’m so glad I did!

Sage Spoonfuls by Liza Huber book review

Now, again, I can’t speak from personal experience, but Liza states that for only 1 hour every two weeks, you can have a freezer full of homemade healthy baby food!

She created Sage Spoonfuls as a complete homemade baby-food system, of which the book is part of. The “system” includes storage jars, blenders, freezer packs, coolers, totes, etc. and the book does promote her products, but her ideas are 100% doable without any additional purchases, unless of course you want to. Well, I should clarify that you will need to buy some sort of small storage containers or baggies if you want to freeze your baby food, which is the whole point of the book, but most of the other necessary tools are items you probably already have in your kitchen: veggie peeler, strainer, cutting board, knife, spoon, cooking pot with steamer/lid, skillet/fry pan, baking sheet, immersion blender or food processor, fork, glass bowl, spatula, & sauce pan.

So let’s start with what I liked about the physical aspects of the book. It’s spiral bound, so it lies flat on your counter; that’s so helpful when you’re trying to read while cooking. The pages are thick & glossy, which I assume could resist staining (again, so helpful in the kitchen!) There’s bold bright colors on every page, with easy to read fonts and graphics. Lot of big detailed photographs throughout.

There is a lot of information to read and if you are new mom, it might be a good idea to read it once then go back and read it at least one more time to really understand the process. I dog-eared many pages and highlighted text that I thought was important!

So, there are 5 chapters in the book: Food for Thought; the Essentials; Let’s Get Started; a Homemade Lifestyle; and Recipes. Each chapter is loaded with tips, hints and details that will give you all the information you need to feed your baby homemade food. There is a 2 page “index” at the back of the book, and it’s easy to find each vegetable or fruit, along with the general subjects she mentions in the book, like Foods to Avoid, Reheating, Infant CPR.

Liza covers every aspect of how to prepare homemade food for your baby, including nutritional facts (vitamins, minerals, fats, etc) and allergies. I love that she encourages adding herbs and spices to your baby’s food. Again, I might be totally experienced in this area, but I always thought baby food should be bland. Not so! In fact, she states that the more flavors your baby is exposed to, the more “adventurous” an eater he will be, and the less “picky” he will be later in life.

Sage Spoonfuls really is a A-Z book on EVERYTHING you need to know. What is the best way to reheat the baby food? How to quickly defrost the food from freezer? What do you look for when shopping for produce or meat? What to expect when going on an overnight trip to a location with a fridge? Liza covers that, along with other scenarios like day trips, and overnights without a fridge.

My favorite chapter is Recipes – it covers each stage in a baby’s life, starting with 4-6 months, then 7-9 months, and 10-12 months. I suppose you could say that these are technically not really “recipes”, but a directory of ingredients appropriate for that specific age group.

There is also a section on Family Favorites, simple recipes that the entire family, including adults, babies, toddlers, and older children, will enjoy.

The first three age-centered recipe sections each start with a FAQ, which answers just about every question you could have concerning feeding your baby at that particular age. Liza encourages you to keep trying if at first your baby doesn’t respond. She makes every “problem” sound completely normal and that you are not alone; there are other moms that went through the same, and it’s okay!

Each single ingredient is highlighted on two pages. The first page includes helpful tips for cooking/preparing along with nutritional data plus the appropriate age at which you should start feeding the particular ingredient. She also lists if the ingredient is suitable for freezer and/or fridge and how to store “on the go”.

The ingredient’s 2nd page focuses on yummy food combinations, again, appropriate for that particular age group. This is my absolute favorite aspect of the book. I don’t know why, but these food combinations just thrilled me. I just love the knowledge that banana can be easily combined with apples or pears & parsnips – I mean, what commercial baby food manufacturer offers a jar combining potato, pea and pear? I guess that’s what makes homemade food so exciting. The endless possibility of yummy tasty combinations!

Another favorite part of the Sage Spoonfuls book was the realization that you can indeed make homemade baby cereal! Okay, it could be my lack of child rearing experience, but I think it’s so cool that you can easily make your own rice, oatmeal, barley and millet baby cereal and it will be tons better than anything you buy at the store!

My complaints about the book? I wish she shared more about the why’s of some of her tips. For example, why you need to peel vegetables and fruit? Is it because it is more difficult to puree or could it cause choking? And why she didn’t mention using a microwave to warm the food? I’m assuming her belief is that perhaps a microwave kills nutrients, but I would have loved to have read her official opinions on both.

I’m sure most of the book content can be found in various books or other “mommy” web sites, but it’s really handy to have ONE book that explains all aspects of preparing homemade baby food!

I recommend Sage Spoonfuls – Simple Recipes, Healthy Meals, Happy Babies to new moms, or moms without a lot of cooking or nutritional knowledge. I’d even recommend this for grandmas that want to give their grandbabies healthy homemade food when they visit.

This is the way I wish all children could be raised, eating wholesome homemade food! We could eliminate so many chronic illnesses and especially childhood obesity problems! If only parents would take the extra time to cook for their families! It is probably the best gift they could give!
