Semi Homemade Pizza

The other day, I bought a ready-made “Rustic Crust” brand thin pizza crust. I know it’s not completely homemade, but the list of ingredients were very good: Unbleached/Unbromated Wheat Flour, Water, Natural Culture, Semolina Flour, Whole Wheat Flour, Sea Salt, Honey, Yeast, Organic Soy Oil, Olive Oil.

Yes, it’s white flour, but it’s pizza! Come on! I would have liked to get the whole wheat crust, but it was more calories. This was thin and crispy and absolutely delicious!

Anyway, here’s how I made the pizza:

I brushed 1 Tbsp of Olive Oil on the crust, and topped it with:
sliced tomatoes,
sliced halved onions,
chopped garlic
fresh spinach (chiffonaded),
fresh mozzarella (about 8 oz, sliced) – I will use less next time, and possibly some Parmasan Reggiano as well.

Baked in my counter top convection oven, using the pizza pan – about 400° for hmm, I think about 15 minutes or until brown and bubbly.

Once it was ready, we cut it in half, and then into 8 slices. We each ate half a pizza. Calories were about 670 (give or take) and worth every single calorie!! It’s now one of my favorite meals for sure. OMG, it was heaven!

And next time, my DH wants tomato sauce, so I will add that to his half, and I might add mushrooms to my half. I definitely won’t use as much cheese next time, to save on the calories. But all in all, it was good clean eating, even though it was a bit more calories. I didn’t feel any guilt though! Should I? haha!

  1. looks really good. i also have a new favorite that we make at home and i feel guiltless about eating. same crust brushed with olive oil, and then sprinkled with a little garlic powder, cracked black pepper, and parsely. a new addition i have added added is a tiny pinch of greek seasoning and some heat with a little crushed red pepper (speeds up metabolism). then i pre bake for 3 min. then i top with about 2 tblsp of roasted garlic spaghetti sauce, low fat skim milk mozzerella, steamed brocolli, red bell pepper strips, grilled chicken, spiniach ribons, and then a little crumbled feta. talk about yummy, and all the veggies make me feel less guilty while still indulging. it is now a weekly fave in my house!
